Sambar Powder Recipe




Ingredients:

• 130 gms Red Chillies
• 140 gms Coriander seeds
• 25 gms Cumin seeds
• 10 gms Fenugreek seeds


Method:
• Dry Roast the ingredients one by one, separately in a pan.
• Fry chillies at the end using a few drops of oil. Dry grind them with other roasted ingredients.
• If you like the taste of curry leaves, add a handful dried leaves dry roasted and grind them with the other ingredients. Some add Asafoetida and turmeric stalks to it.
• The sambar powder prepared this way, preserved in an airtight container,stays fresh for many months and besides making sambar this can be substituted in any kootu or lentil based curry, veg or non veg curries and dry fries, where coriander, jeera and chilly powders are to be used separately.
