Coconut Barfi Recipe

Ingredients:
• 1 Cup Shredded Coconut
• 1 Cup Sugar
• 25gms Cashews
• 4 pods elaichi (powdered)
• 2 tbsp Ghee

Method:

• Heat 2tsp ghee in a pan and roast the cashews till golden.
• In a hot pan, add the sugar and little water. Leave it to boil.
• When in boil, take the syrup in a teaspoon, hold the syrun inbetween the thumb and the forefinger and drag. it would form a strong string. It is the right consistency to add the coconut
• Add the coconut and mix well.
• Keep mixing until it reduces in volume.
• Add the roasted cashews, ealichi powder and the remaining ghee.
• Grease a plate in ghee and spread the mixture evenly.
• When it is half cooled, cut into pieces and it is cooled completely it would come off the plate easily.
