Coconut Carrot Barfi Recipe

Ingredients:
• 1 Cup shredded coconut
• 1 Cup grated Carrot
• 1 1/2 Cup Sugar
• 50gms Cashews
• 5 pods elaichi (powdered)
• 6 tbsp Ghee

Method:

• Heat 2tsp ghee in a pan and raost the cashews.
• In a hot pan, add sugar and little water and leave it to boil.
• Take a teaspoon of the syrup, hold the syrup inbetween the thumb and forefinger and drag. A strong string would ensure the right consistency.
• Add the grated carrot and the shredded coconut. Mix well.
• Add the elaichi powder, roasted cashews and teh remaining ghee.
• Once the mixture reduces in volume, remove from heat and spread it in a greased plate.
• When half cooled cut into pieces and once cooled it come out of the plate easily.
• Coconut Carrot Barfi is ready to serve.
