• Add the ginger, green chillies and salt to the batter and mix well.
• Heat a iron griddle. Spread a ladle of batter and it with a handful of chopped mixed vegetables. Unlike Dosa, for Uthappams batter should be laid thick.
• Pour oil around the side. Cover and cook for 2-3 mins in medium heat.
• When one side is cooked, flip and cook the other side for a minute without covering.
• Serve the Uthappam hot with Chutney or Sambar.
• Topping the batter with chopped onions makes it Onion Uthappam, with chopped tomatoes makes it Tomato Uthappam.
• You can top the batter with vegetables of your choice. |
