Idiappam Recipe


Ingredients:

• 2-3 Cups of Raw Rice
• 2 Cups Water
• Salt to taste

Method:
• To make rice flour at home, soak 2 to 3 cups of raw rice four hours. Drain the water completely. Put it in a mixie in batches and grind to a nice powder. Put this powder in a large kadai and fry on medium flame till the moisture evaporates and when you touch the flour, it should not stick to your hand. Cool it and sieve it. You can store this flour and use it for preparing idiappam.
• OR you can buy rice flour from store and fry it as above and make idiappam.
• Bring two cups of water to boil. Add a pinch of salt and a teaspoon of oil to the boiling water. Put one cup of flour in a bowl. Add the boiling water little by little and stir with a wooden spoon. Make a soft dough.
• Grease Idli plate. Take a small quantity of dough and put it in the Idiappam maker. Press on the greased plate circle wise. Steam it for 5 minutes.
• Serve them hot with Grated Coconut and Sugar, Chicken Curry, Vegetable Stew, Kadala Kari, Kosumalli• You can try Podi Idiappam, Lemon Idiappam with leftover Idiappam or freshly made Idiappam.
